Stara Škola – A transformation story in Istria
Stara Škola is a destination restaurant set within a restored historic schoolhouse in Croatia. In 2025, we partnered with the ownership team to transform the restaurant's culinary identity, positioning, and guest experience. A transformation from its original concept to a story told through identity.
Drawing on the landscape, produce, and traditions of inland Istria, we implemented a concept that translates regional heritage into a contemporary dining experience. An ongoing collaboration, we continue to work with the Stara Škola team, initiating events, pop-ups, and ensuring their culinary excellence is maintained to inspire both local and international guests.
